Many popular dishes contain chilli, but with many different types on the market you may not be sure which to use. Here are some of the advantages of using powdered or fresh chillies.


Chilli powder is made from ground dried chillies. One advantage it has over fresh chillies is that it will keep for a long time - as long as several years. It, therefore, makes a good standby to buy for the store cupboard and use on an ad hoc basis. This also makes it economical to buy, as you can buy it in large quantities without worrying about whether it will go bad before you need to use it.

Powdered chilli is also very versatile. A small pinch can add a kick to a wide variety of dishes, not just those that need to be spicy. Any stew or casserole is likely to benefit from a small amount and as simple a meal as baked beans can become more interesting when spiced up in this way.


Fresh chillies have their own advantages, however. Although there will be no difference in spiciness in a slow-cooked stew, fresh chillies come into their own in faster meals such as stir-fries or even in salads. Their bright colours provide an attractive appearance, and they also give a more sudden intense heat in the mouth. This is because the chilli oil is attached to water molecules, which burst into your mouth when you eat it. They will therefore taste fresher than stews where the chilli has infused the entire meal.

It is also worth remembering that you know what you are getting with fresh chilli. Chilli powders are usually blended with other herbs and spices such as oregano, cumin and garlic. There is nothing wrong with this — it can add a more rounded flavour to your dish — but if you only wanted the flavour of the chilli, you would need to read the ingredients very carefully to make sure there were no other spices involved. When you buy a fresh chilli, you will see that you are getting the chilli itself and nothing else.
